Fresh and lively: a lightly sparkling wine produced with organically grown grapes of Grillo, one of the finest native white grape variety in Sicily. Certified Bio Vegan, this wine is ideal as an aperitif, but it is also a good partner for vegetarian dishes and many specialties of Mediterranean cousine.
Grape varieties: Grillo 100%
Vineyards: sandy soil, situated at approximately 200 m above sea level; training system: guyot
Raccolta: by hand into crates, in September
Ageing: in stainless steel vats and approximately 2 months in the bottle
Production method: the grapes, carefully selected, are gently pressed and then subjected to 48 hours of settling at a low temperature. The juice is fermented at controlled temperatures; the base sparkling wine produced is then poured into sealed tanks, where, thanks to the addition of yeasts, place a second fermentation, it’s made from the carbon dioxide that gives the wine it’s delicate perlage
Alcohol content: 12,5% vol.
Colour: brilliant straw-yellow with greenish highlights and a delicate perlage
Nose: fresh and citrusy bouquet with floral hints and notes of aromatic herbs
Palate: dry and well-balanced with a marked sapidity and a great freshness, which is enhanced by the delicate perlage
Food Pairings: ideal as an aperitif, it pairs very well with fresh cheese, pasta salads, vegetarian quiches and vegetable tempura; it is also excellent with the typical Sicilian chickpea fritters named ‘Panelle’ (a traditional Sicilian street food)
