Organic Nerello Mascalese

DOC Sicilia

The high altitude of the vineyards and the extraordinary concentration of minerals in the volcanic soils of Etna give this red wine from Nerello Mascalese grapes complex notes of aromatic herbs, spices, cherry and red berries. The palate is elegant, well-structured and balanced with a typical mineral character

Grape varieties: Nerello Mascalese

Vineyards: the soil is volcanic, very rich in minerals, at an altitude of 700-750 m above sea level, with good range of temperature between day and night; training system: espalier spurred cordon

Raccolta: by hand into crates, in the mid-end of October

Maceration: for approximately 10-15 days

Fermentation: controlled temperature (24-26°C)

Ageing: mainly in stainless steel vats, 30% of the wine stays 5-6 months in barrique and 3-4 in large oak casks; the ageing is completed by a stay of 4-5 months in the bottle

Alcohol content: 13% vol.

Colour: ruby red with brilliant highlights

Nose: complex and elegant with a bouquet of aromatic herbs and liquorice

Palate: warm and full-bodied flavour with a long balsamic finish

Food Pairings: semi-aged cheeses, flavoursome first dishes, grilled and roasted meats

Serving temperature: 16-18°C
